The Milk Shed 創立於 2019 年，是布萊頓 The Lanes 區 Prince Albert Street 一棟喬治亞風老建築內的 specialty coffee roaster + dessert cafe。創辦人 Matt Braithwaite 與 Sophie Braithwaite 夫婦於 2019 年在 The Lanes 開設旗艦店，後於 2021 年搬遷到現址擴大烘焙工坊與 café 空間。烘焙工坊位於 Brighton Marina 附近的 Lancing Industrial Estate，配備 15kg Loring Peregrine 智能烘豆機與 Diedrich IR 12 kg sample roaster，每月從衣索比亞、肯亞、哥倫比亞、玻利維亞、巴拿馬等十多個產區直接採購 green bean，並邀請其他國際 specialty roaster（La Cabra、Onyx、Tim Wendelboe 等）以 guest roast 形式限量供應。店內除了 espresso / V60 濾滴手沖，更主打 NYC-style stuffed cookies（Nutella / Biscoff / pistachio 三款招牌）作為甜點 + 咖啡搭配，是 Brighton 文青圈層的朝聖店家。室內走新英倫風（老木作 + 米白色牆 + 黃銅 espresso machine），與典型英式 fk 店做出明顯差異。媒體背書：Brighton & Hove Food Awards 2022「Best Newcomer」獎、Guardian UK「Brighton's 10 Best Coffee Shops」專題收錄、Sprudge 2024「UK Specialty Coffee Scene」專文報導。
